Chris is a huge Nebraska fan so as much as I don’t like them (Go Hawks!) we end up watching a lot of Husker football. On Monday the Huskers played in the Capital One bowl and we were invited to a few friends’ houses for parties.
I LOVE making food to take to other people’s house, or entertaining at our house for that matter. I wanted to try something new and a bit out of my comfort zone. I decided to make Oreo Truffles that look like footballs. I saw the idea on Pinterest – originally posted here. Mine didn’t look perfect, but I’m pretty proud of them!
They are super easy and challenging at the same time…
1 package Oreo cookies (originals)
1 (8 ounce) package Philadelphia Cream Cheese, softened
Dipping chocolate: Milk Chocolate and White
Finely crush the Oreos (I used my food processor and it worked great). Mix with the cream cheese until well blended. Shape into 1-inch balls. Refrigerate for about 30 minutes, then remove and shape into oval football shapes. Refrigerate until the dipping chocolate is ready.
Melt the dipping chocolate according to the package directions and dip the balls in melted chocolate; place on waxed paper-covered baking sheet. Refrigerate for 1 hour or until the chocolate has set (I did the full hour to be on the safe side). Melt white chocolate and pipe on the laces. Store a in tightly covered container in fridge.
It definitely helps to keep the Oreo mix cold, otherwise it starts to flake apart when you start dipping it.
I also threw together some queso dip. Or I should say Chris did-I wasn’t feeling well so he helped out quite a bit with the food prep this weekend. It was a simple mix of Rotel tomatoes & green chiles (1 can) and a block of Velveeta cheese. I mainly wanted to make this because I received a cute new crock pot for Christmas that I wanted to break in (Thanks Grandma!!).
